Ingredients: 100g low-gluten flour, 15g caster sugar, 1/4 tsp salt (1.25ML), 25g butter, 1 tbsp whole egg liquid (15ML), 45ML milk, 15g dried cranberries, 1 tsp baking powder, a little whole egg liquid (for brushing the surface)

Sift together low-gluten flour, baking powder and salt. Add the whole egg liquid and milk to the flour and knead it into a dough.

Add the softened butter and sugar to the sifted flour. Knead the butter and flour with your hands until the butter and flour are completely mixed and become a coarse corn meal.

Add dried cranberries and knead into a smooth dough. The surface of the kneaded dough is shiny and not sticky. Do not over-knead the dough to avoid excessive gluten production that will affect the taste of the finished product.

Use a rolling pin to roll the dough into a 1.5CM thick sheet. Use a cookie cutter to cut out model dough pieces from the dough sheet.

Arrange the cut round dough slices on the baking sheet and brush a layer of egg wash on the surface.

Place in a preheated oven at 200 degrees and bake for about 15 minutes, until the surface is golden brown.
