Use a whisk to beat the egg whites at low speed. When the egg whites form big fish-eye bubbles, add a few drops of lemon juice

Pour in the white sugar in three batches, then change to medium to high speed and continue to beat the egg whites (tip: you can preheat the oven at this time)

When the egg whites are whipped to a stiff peak, lift the egg beater until both sides have straight sharp edges

Take one-third of the egg white and put it into the egg yolk paste, use a spatula to stir from bottom to top (the method is to stir the egg paste with your right hand and slowly turn the container with your left hand) and stir the egg yolk paste evenly
