Cut the butter into small pieces and soften it. Beat it with a whisk until smooth and set aside

Add 30 grams of sugar to the egg whites and beat until wet and set aside

Prepare and set aside. Add the remaining 50 grams of sugar to 30 grams of water and boil over high heat to 121 degrees. You can also visually check for dense bubbles on the top.

After boiling the sugar water, immediately pour it into the beaten egg whites and beat quickly to cool it down!

Pour the beaten egg whites into the butter and beat evenly (beat quickly). It will look like bean dregs just after mixing. Don't worry just keep playing!
