Red bean roll bread

Red bean roll bread

Overview

This is one of the most commonly made snacks in my family. Every time I go to Metro to buy red bean paste, it comes in a big bag and it takes a long time to consume, so I make it from time to time. Mr. R, who never likes sweets, actually has a special preference for it. Whenever he makes this dish, he will eat one or two. Even if he is sensitive to the taste of milk, he can avoid it. The children are even more happy and love to follow them around and play with the dough every time, so they are used to reserving more dough every time for them to waste. Think about it, it's healthier than playing with plasticine.

Steps

  1. Except for the butter and red bean paste, put all the ingredients into the bread machine in order, put the liquid first, then the flour, dig a hole in the flour and bury the yeast, and start the dough mixing process once.

  2. At the end of one kneading process, the thicker film can be pulled apart. My machine takes 20 minutes each time.

  3. Add the butter cubes that have been softened in advance and continue to start the dough mixing process.

  4. In the second kneading process, knead the dough until a thin and transparent film can be pulled out. It is almost complete and is enough to make sweet bread. Cover and let rise in a warm place until doubled in size. (Dip your index finger into the flour and insert it into the dough. After taking it out, if the hole does not rebound or dent, the fermentation is complete.)

  5. After the fermented dough is completely deflated, divide it into six equal parts and roll them into balls. Cover with plastic wrap and rest at room temperature for 15 minutes. While waiting, weigh out the bean paste filling and roll into 25g portion. Set aside. (I did more in the picture)

  6. Take a piece of dough and flatten it, then add the pre-measured bean paste filling. Tighten the mouth and pinch it firmly, pointing downwards and flattening it gently.

  7. Use a rolling pin to slowly roll it into a slightly longer oval shape. Do not use excessive force to prevent the broken bean paste from being exposed. And use a sharp blade to carefully cut through the top layer of dough. Be sure to do it slowly and never cut through. Do not operate on a silicone mat to prevent damage!

  8. Take the two ends of the cut dough and bring it together in the middle. Roll one end tightly, insert the other end and pinch it firmly. After rolling everything up, put it into the baking pan, spaced in the middle, and put it in an environment with a temperature of 38 degrees and a humidity of 85 degrees for secondary fermentation. I fermented it in the oven and put a plate of hot water under the baking pan (I changed the water twice during the process)

  9. After the dough has risen until doubled in size, take it out, brush the surface with whole egg wash, and sprinkle some white sesame seeds. At the same time, preheat the oven to 180 degrees, place the middle layer and bake for 20 to 25 minutes, paying attention to the color.

  10. The baked bread should be taken out in time, placed on a drying net to dry until it is warm to your hands, then sealed with plastic wrap. (Try not to eat freshly baked bread right away, as it is not good for your stomach. At the same time, do not wait until it has cooled before packaging it, as it will dry out.)

  11. The finished product that took 4 hours to bake was completely wiped out in no time. Fortunately, I took two of them in advance and took some beautiful pictures in the sunshine
