Three fresh shepherd's purse, winter bamboo shoots and fragrant dried spring rolls---one of the cold dishes for New Year's Eve dinner
Ingredients: 20 fresh spring roll wrappers, 300G shepherd's purse, one smoked dried winter bamboo shoot, 2 pieces salt, appropriate amount of sesame oil, a few drops of salad oil 100G. Method: 1. Remove the old rotten leaves and roots of the shepherd's purse, clean them. It usually takes more than 5 to 6 times, then drain the water and chop them into pieces for later use. 2. Peel the winter bamboo shoots, rinse them with water, wash them, cut them into slices, and blanch them in a pot. 3 Then cool the winter bamboo shoots thoroughly, pat dry with kitchen paper, chop and set aside. Put the vegetables, winter bamboo shoots and dried smoked powder into a bowl, add salt, add a few drops of sesame oil and mix well. 4 Flatten a piece of spring roll skin, add fillings, wrap tightly. 5 Heat oil in a pan. When the oil temperature rises, add the spring rolls and slowly fry or fry over low heat. Use chopsticks to turn them over, fry until golden brown, and put on a plate. 6. Dip it in light soy sauce or tomato sauce or eat it alone
