Steps
-
Knead the dough as hard as you can. I tried my best to knead it to this level
-
Knead them together, use a pole to open them, and use the power of the dough press to press the dough smooth
-
After pressing the dough and letting it cool, now chop the vegetables! I chopped the tomatoes very small, as big as mung beans. The more chopped the better, I also chopped some green onions! ! ! (Pick the tomatoes that are soft and red, and the color of the soup will look good when fried)
-
Just chop the leeks! ! ! After cutting the vegetables, I pressed the noodles before washing them. After washing, I cut them casually! ! !
-
Pour oil into the pot. When the oil is almost hot, add tomatoes and chopped green onions, stir-fry for a few times, add tomato paste and continue to fry. When the color comes out, add vinegar, add seasonings and continue to fry for a while, and finally add water! ! ! (You can also add some spicy noodles when frying. I don’t have spicy noodles at home, so I didn’t add them)
-
Let the sour soup in the pot simmer for a few minutes. At this time, cut the noodles. Sprinkle the pressed noodles with dry flour, put them together layer by layer, and cut them into four pieces! As shown in the picture (dry noodles must be sprinkled, otherwise they will stick together)
-
The first step is to cut it like this. I cut it as thin as a vermicelli! ! !
-
I used a two-step knife to cut diagonally, and the cuts were as fine as the vermicelli! ! !
-
After I cut two pieces of noodles, the soup was almost ready. I took away the sour soup and boiled water in a pot to cook the noodles
-
While the water was boiling, I finished cutting the remaining noodles
-
When the water is boiling and the noodles are cooked, add the leeks. Don’t cook them anymore. Stir a few times and immediately take them out of the pot. Put the noodles into the sour soup and that’s it
-
The final product! ! ! Does it smell good? ! ! !
