Rye Yogurt Meal Pack
Overview
I have been making rye or whole wheat bread recently. My husband prefers this rye bread. He always says that this bread has a strong wheat aroma, and this wheat aroma has been away from us for a long time. Rye contains high dietary fiber. In order to make up for the lack of chewiness and elasticity of bread made from rye flour, half of the high-gluten flour is added to neutralize it, homemade yogurt is used to knead the dough, and some dried fruits are added to greatly enhance the flavor of the bread.

Prepare all ingredients

Add yogurt, eggs, sugar, and salt to the bread barrel in sequence. Tear in the dough, add rye flour and high-gluten flour, and bury the yeast in the middle

Knead the dough for 20 minutes and then add butter

Knead the dough for another 20 minutes to release the dough

Switch to fermentation program

Ferment until more than 2 times

Remove the air and set aside 100 grams for making old noodles. Divide the remainder into 8 equal parts, cover with plastic wrap and let rest for 15 minutes

Round it again and roll it into a long strip. Add raisins

Roll it up from top to bottom and put it into the mold until everything is ready and put it into the mold

Put it in the oven for the second time and put a basin of hot water under the baking pan

Ferment until doubled in size. Brush with egg wash, sprinkle with almond flakes, and preheat the oven to 180 degrees

Place in the preheated oven and bake on the second to last layer for 18 minutes

The crust of freshly baked bread is crispy and will soften as it cools down.
