Raw cheesecake
Overview
Today's dessert - raw cheese cake, is simple to make but has an extraordinary taste. It is mainly white and decorated with pink petals. It is dedicated to White Valentine's Day. It can be regarded as a suitable creation. Fang Zi referred to the "Little Cheesecake Recipe Book" and made major changes himself.

Divide the whipping cream evenly into two portions of 75 grams, add milk to one portion, sprinkle with gelatine powder and let it sit for a while.

Put the cream cheese into a microwaveable container, cover the surface with microwaveable cling film, heat until softened (heat it over water if you don’t have a microwave), and stir evenly with an egg beater.

Add powdered sugar, yogurt, lemon juice and 75 grams of whipping cream in order. Mix each ingredient thoroughly before adding the next one. Make cheese paste and set aside.

Heat the mixture in step 1 with microwave until the gelatine powder is completely melted (heat it over water if there is no microwave), and stir evenly to form a gelatine solution.

Add the gelatine solution from the previous step to the cheese paste in step 3 in three batches, stirring thoroughly each time before adding the next time. The batter for the raw cheese cake is completed.

Pour the raw cheesecake batter into the mousse ring (wrap the bottom with tin foil) and place it in the refrigerator to chill until solid.

Use a hair dryer to blow outside the mousse circle for a while, release the mousse, and enjoy the delicious food.
