Steamed Bean Braised Noodles
Overview
Steamed Braised Noodles is a specialty staple food in Henan. It is loved by everyone and one of the staple foods that appears frequently on the dining table. The main thing is to choose thin noodles, and the side dishes are based on your preference, such as bean sprouts, beans, celery, etc., and the meat can also be pork belly or front leg meat. Today I made steamed braised noodles with green beans. After the noodles are cooked, they become chewier and more fragrant. ...Haha.

Steps
-
Have all the ingredients ready.
-
Wash the beans and cut them into long sections, cut the tomatoes into cubes, cut the pork belly into strips, shred the ginger, and slice the green onions.
-
Put the same amount of oil in the wok as usual for stir-frying, add pork belly, minced onion and ginger, and stir-fry until fragrant.
-
Put water in the pot and bring to a boil, put the noodles on the basket, do not compact them, make them as fluffy as possible, cover the pot with a lid, after the water boils, put them into the pot and steam them for 15 minutes over medium heat.
-
Add the beans and tomatoes and stir-fry evenly, then add salt, dark soy sauce, five-spice powder and chicken essence and stir-fry for two minutes (a little more dark soy sauce is needed to allow the noodles to color well).
-
Add water until almost parallel to the dish.
-
Add the steamed noodles and stir evenly to coat the noodles with the soup. The amount of soup should be enough to mix every noodle evenly without leaving any soup after mixing.
-
After mixing, put it in a basket and steam it for 15 minutes.
