Durian yogurt cake
Overview
The original recipe used cream cheese, but I didn’t have enough cheese at home. I just made a big bowl of yogurt the night before, so I replaced the cream cheese with yogurt and reduced the amount of durian meat. There is not much difference in taste and it feels healthier

Add the egg yolks and stir evenly. Note that the egg yolks should be added one by one. Stir the first one before adding the second one

Sift in low-gluten flour

Stir evenly, being careful not to make circles, otherwise the flour will easily become glutenous

Place a baking pan at the bottom of the oven, add hot water, place a baking mesh on the middle and lower layers, preheat to 160 degrees for 10 minutes

Put the egg whites in a water-free and oil-free container, add a few drops of lemon juice or white vinegar, and beat with the electric egg mixer at level 1 until it becomes rough. Add one-third of the fine sugar

When beating until fine, add one third of the caster sugar

Beat at speed 3 until fine lines form, add the remaining caster sugar

Adjust to speed 5 and beat until wet peaks form. Lift the whisk head and the egg whites will appear in the shape of small hooks

Divide one-third of the egg white into the egg yolk paste, stir evenly from bottom to top, and do not make circles to prevent the egg white from defoaming

Pour the egg yolk paste into the egg white bowl and mix evenly

Line the bottom of an eight-inch cake mold with oiled paper, wrap the outside of the removable bottom mold with tin foil, pour in the cake batter, and shake it vigorously on the table a few times to release big bubbles

Place on the baking grid in the oven, heat up and down, 160 degrees, 70 minutes (time and temperature should be determined according to the temperament of your own oven)

After the baking time is over, simmer in the oven for 15 minutes, take it out and let it cool, then put it in the refrigerator for more than 4 hours to unmold and eat, the taste will be better
