Patterned cat ears
Overview
Cat's ears are a traditional Han pasta popular in Shanxi, Shaanxi and other places. It is not made of cat ears as the name says, but it is named because of its resemblance to cat ears. Shaanxi calls this kind of food hemp food. I used different tools to make cat ears in three colors. The tools are all commonly found at home.

Take an appropriate amount of flour, add water and knead the flour into a dough of moderate hardness. Cover with plastic wrap and let sit for 30 minutes. (The hardness of the noodles is softer than noodles and harder than noodles for dumplings. If it is too hard, the cat ears will be stiff, difficult to cook, and difficult to digest. If the cat ears are too soft, the colors will not look good, and it will easily stick to dimples. It will taste weak and sticky.) I used 150g of white flour, 150g of buckwheat noodles, and added 160g of water, which was just right. If you don’t weigh it, add water in small amounts;

Place the risen dough on the board, knead it into a smooth ball, and use a rolling pin to roll it into a dough cake with a thickness of about 1cm;

Cut into 1cm*1cm dices. If there is any sticking, remember to sprinkle some dry flour;

Sprinkle dry flour on the board, take a diced dough and press it forward with the outer edge of the pad of your thumb to form smooth cat ears. This is the most homely version;

Take a rice shovel with convex points, sprinkle dry flour on the shovel, and press it with the same method to form concave cat ears;

Press the threaded cat ears on a bamboo grate or sushi curtain;
