Wash the celery and cut into diagonal sections. If the vermicelli is dry, soak it in advance. I use wet ones from the supermarket, so I just wash them and use them directly.

Chop onions and garlic and set aside.

When the pot is hot, add the chopped mutton, stir-fry over low heat to remove the fat, then add a little five-spice powder to remove the fishy smell and improve the aroma. There is no need to add vegetable oil to a low-fat diet, just stir-fry the meat and you’re done~

After the meat is fried, add the celery segments and stir-fry until slightly wilted.

Add two spoons of oil, one spoon of light soy sauce, and one spoon of mature vinegar to the pot. Add the chopped onion and garlic and stir-fry evenly.

Add the vermicelli and stir-fry, add half a bowl of water, cover the pot and simmer for 5 minutes. (If the vermicelli is very long, you can break it appropriately.)

After the vermicelli is simmered to your preferred softness and hardness, collect the juice and serve on a plate.
