Buy the tenderloin and slice it into whatever size you like

Add a little salt, an appropriate amount of starch and water and mix well. I used sweet potato powder without total cornstarch. Flour is also ok

Pour oil into the pot and heat it to about 50%. Add in the meat slices and fry them slowly until cooked through. No requirements

While slowly frying the meat, prepare other ingredients: shred carrots, ginger, and green onions. Prepare the sweet and sour sauce: one spoon of cooking wine, two spoons of soy sauce, three spoons of sugar, four spoons of vinegar, five spoons of water, and set aside

Pour out the oil from the fried pork slices, leave a little base oil and stir-fry the shredded ginger and scallions until fragrant

Then pour in the prepared sweet and sour sauce over low heat and stir constantly

Then pour in an appropriate amount of the remaining water starch from the marinated meat slices (add some water and mix thoroughly) and stir continuously until the soup becomes thick

Add the meat slices, shredded carrots and green onions and stir-fry for a minute or two until the meat slices are evenly coated with the sweet and sour sauce and it’s ready to serve!

The finished product is sweet and sour. The tenderloin is wrapped in starch and fried. It is tender and chewy but not difficult to bite
