Garlic Egg Pancake
Overview
I like spring the most among the four seasons. One of the reasons is that you can eat so many wild vegetables, such as toon, wolfberry, shepherd's purse, and garlic. They are all unique to this season and will not be available after spring. Yesterday I went to the vegetable market and bought a handful of garlic. The garlic can be pickled, fried, or made into pancakes. Pick it up in advance at night, wash it, and use it to make cakes in the morning.

First pick off the yellow leaves of the garlic, leaving the whiskers underneath.

Wash the garlic, dry it and chop it finely.

Add flour, salt and eggs to make a paste.

I forgot to take a picture of it frying in the pan, so I’ll use this one. After frying two pots, the father and son ate it all in one go. The son said, Mom, I tasted the taste of spring.
