Zucchini Egg Pancake
Overview
The zucchini I bought today is very big. I don’t want to fry it, so I might as well make a simple fried egg pancake. I made a total of 6 pancakes and paired it with a bowl of thick porridge. It was enough for my husband and I to have breakfast.

Grate zucchini into shreds

Add salt and marinate for a while

Pour off the water and break in 2 eggs

Mix well

Add a little green onion to enhance the flavor

Add appropriate amount of flour

Stir into batter

Pour a little oil into a flat-bottomed non-stick pan and pour an appropriate amount of batter

Fry on one side and then flip over

Fry both sides till brown and serve
