Rinse the fresh shrimps with water, remove the shrimp whiskers, insert a toothpick from the second joint, and pick out the shrimp lines.

Mix pickling salt and Sichuan peppercorns, put 2/3 into a pan without water, and heat over high heat.

Observe the color of the peppercorns. When the color becomes darker, turn to medium heat and spread a layer of fresh shrimps when you can smell the peppercorns.

Spread the remaining salt and peppercorns over the shrimp.

Cover and bake for 3 minutes.

Then open the lid, turn the shrimp over, and bake for another 2 minutes. Do not cover the lid at this time to allow the water vapor to escape before serving. Don't bake it for too long, otherwise the shrimp will not taste good when it is old~
