Matcha roll
Overview
I bought matcha powder from a friend and used this roll to consecrate it. This time I used Wakatake and the color came out very beautiful. I will try other ones next time, 28*28 golden baking pan

Prepare materials

Mix butter and milk over water and melt

Beat egg yolks with 1 sugar until pale

Beat the egg whites into a rough foam. Add 2 beats of sugar in three batches until wet peaks form, like the curve in the picture

Add the normally beaten egg whites to the egg yolk paste and mix well using J technique

Sift in low-gluten flour and matcha powder at one time, mix well using J technique

Stir in remaining egg whites

Pour the melted butter and milk into the batter with a spatula and mix well

Pour the cake batter into a baking tray lined with baking paper, and bake on the middle shelf at 175 degrees for about 15 minutes, depending on your oven

After taking it out of the oven, tear off the baking paper around it and let it cool. Then tear off the baking paper on the back. Whip the evaporated milk and spread it on the front. Place the diced mango in the middle. Roll it up and put it in the refrigerator for 2 hours
