Red lotus paste mooncake
Overview
Because the mooncakes are too sweet. Hardly any food for the baby. Make your own mooncakes that are not too sweet. Let the babies have something to eat during the holidays. The syrup I made myself was a little too hot. But it doesn't affect the taste. Self-deprecation is like cocoa mooncakes. The dough is very soft after the oil returns. The filling is red lotus paste, thickened for better texture. Add some osmanthus and it tastes delicious.

Wash the red color and soak it for about three hours

Rub out the red soft skin, boil in a pot, let it cool, and use a breaker to make the sauce

If you like to eat with small particles, just break them and you can see the small particles

Fry in a non-stick pan with salad oil

Add osmanthus sugar and fry until it forms lumps

Knead 30G filling balls into equal portions

The dough is transformed into syrup, salad oil, alkaline water and about 80ML of water. Stir together and combine. Add sifted flour and stir. No dry flour. Wrap the dough in plastic wrap and rest at room temperature for about 2 hours. Knead several times in between and divide it into 25G dough

Roll out the bag and put in the filling. Use your hands to slowly close the bag to avoid uneven thickness of the bag

Roll in some dry powder so it doesn’t stick

Put it into the mold and press it so that the pattern will be clear. Be careful not to press it off, as the height of the mooncake will be different

The mold is in good condition

Preheat the oven to 200 degrees and place the mooncakes. The oven temperature is about 150 degrees and it will take about 20 minutes to bake. Spray some water on the mooncakes before the exam. Brush the mooncakes with egg white once during the baking process
