Soak the soybeans the night before

Wash the pig's trotters, check whether there are any unpicked hairs, and then put them in a pot of cold water to blanch them to remove the dirt

Pour oil into the wok, add rock sugar, and simmer over low heat (be sure to stir frequently to avoid burning the pan)

Pour in the blanched pig's trotters. Fry the meat side down until golden brown. Add star anise cooking wine and light soy sauce and mix evenly. Add the soybeans and add water to cover the pig's trotters

Simmer the above steps for one hour or use a pressure cooker for 20 minutes, then put it in a wok over high heat to dry out the water, add salt and mix thoroughly.
