Zero-fail Sweet and Sour Pork Ribs
Overview
I read some recipes for sweet and sour pork ribs, and many of them require deep-frying. The method I am introducing to you today is very simple, but still tastes great~~

Cut the ribs into pieces and wash them.

Blanch in boiling water for a few minutes and then serve.

Rinse the blanched pork ribs with cold water to remove any foam, drain and set aside.

Add oil to the pot, when hot, add ginger slices and stir-fry until fragrant. Pour in the pork ribs and stir-fry briefly until the oil is released.

Pour boiling water into the pot, and use enough water to cover the ribs.

Start adding seasonings to the pot: 100ml vinegar (10 spoons for eating), 15g rock sugar (about 7/8 pieces of rock sugar), 20ml light soy sauce, 10ml rice wine, and 2 bay leaves.

Cover the pot and cook over high heat.

After about 20 minutes, turn to low heat and start to collect the soup. When collecting the soup, use a spatula to stir-fry constantly to avoid burning the pot.

When the soup is almost dry, turn off the heat and take out the pot.
