Stir-fried Enoki Mushrooms
Overview
It is a side dish that is simple to make but not simple in taste. If you like spicy food, add a spoonful of chili oil to make it even better.

Remove the roots of enoki mushrooms, soak them in light salt water, wash and control the water;

Chop green onions, chop coriander, and slice carrots;

Take a small bowl, add chopped green onion and coriander, and add all the seasonings;

Bring water to a boil, add enoki mushrooms and blanch for 2 minutes;

Remove and press dry with the back of a colander;

Blanch carrot slices for 1 minute;
