Wash and shave the silver carp heads you bought back. Remove all the gills and a layer of black film from the inside of the fish head.

Cut the fish head in half in the middle, but don't cut it off, leaving a little bit to connect the two halves.

Place the cut fish head on a plate and make a few cuts on the fish to enhance the flavor when marinating. After cutting, shred the ginger and spread it on the fish head. Spread salt and white pepper on both sides of the fish head. Finally, pour cooking wine on the fish head and marinate for about 30 minutes.

Chop the remaining ginger and garlic into mince, chop some coriander and set aside.

Turn on the heat and add oil to the pot. Add the chopped ginger and minced garlic into the pot and stir-fry until fragrant. Then add the chopped pepper, add a small amount of salt, light soy sauce, oil, chicken essence, and a small amount of water and stir-fry together to form a sauce.

Pour away the cooking wine used to marinate the fish head, and spread the fried sauce evenly on the fish head. Remember to spread a little on the other side of the fish head, so that it will be more delicious when steamed.

Heat the water in the wok, and after the water boils, put the laid fish heads into the pot and steam for 15 minutes.
