Add salt, cooking wine, light soy sauce, and water starch to the minced meat, mix well, and marinate for 10 minutes.

Cut bamboo shoots, dried tofu, celery, king oyster mushroom, and carrot into cubes.

Heat oil in a pan, add minced meat and stir-fry until it changes color.

Add diced vegetables and stir-fry until cooked, add salt and light soy sauce to taste and stir-fry evenly.

Remove and let cool.

Take an appropriate amount of filling and place it in the middle of the dumpling wrapper.

Make the dumplings.

Bring water to a boil in a pot, add some salt, put in the dumplings and push gently with a spoon to prevent them from sticking to the pot. Bring to a boil over medium-high heat, then pour cold water twice and cook until the dumplings float.

Serve it out and add seasonings such as cold soy sauce and balsamic vinegar according to your preference.
