Cream Puffs
Overview
Introduced to France in the 16th century, the birth of puffs is technically considered to be an accidental discovery. The situation is that in the past, the Habsburg dynasty of Austria and the Bourbon dynasty of France had been exhausted from their long-term struggle for European dominance. Later, in order to prevent neighboring countries from benefiting from the situation, the two sides reached a political marriage agreement. So the Austrian princess and the French crown prince held a wedding banquet in the Palace of Versailles. Puffs were the finale dessert of this feast between the two countries, which put an end to the long-term war. Since then, Hamilton Puffs have become a dessert in France that symbolizes auspiciousness and goodwill. On festive occasions such as the birth of a baby or the wedding of a newlywed, it is customary to dip the puffs in caramel and pile them into a tower to celebrate, called a Croquembouche, which symbolizes joy and congratulations.

Put butter, water, salt, and sugar into a pot and cook over medium heat until butter melts and water boils.

When the dough has cooled down and is no longer hot, add the beaten egg liquid in several batches. Add the egg liquid after mixing well each time and check the state of the dough.

Just make the batter look like an inverted triangle. About 3 large eggs are about the same. I used almost 5 small eggs, so you need to add the egg liquid in stages depending on the state of the batter

Use a piping bag or piping gun to pipe the batter onto a baking sheet lined with greaseproof paper. Use your chrysanthemum mouth as much as possible!

Preheat the oven to 210 degrees, bake the puffs for 15 minutes to expand and set, then bake at 180 degrees for 20 minutes, until the surface is golden.

Take out the whipping cream that has been refrigerated overnight, add sugar and ice water and beat it.

Place into a piping bag and pipe the cream from the bottom of the puff.
