After buying the shrimp, cut off the beards, legs and mouth, pick out the intestines and stomach of the shrimp (the method of cleaning the shrimp can be found in my spicy shrimp recipe), place it on kitchen paper to absorb the water and set aside

A large jar of sea salt, mixed with Sichuan peppercorns, dried chilies, and star anise and cinnamon

Add sea salt to the pot and stir-fry

Place the shrimp on the sea salt, cover the pot and bake over low heat for 10 minutes

Flip and bake for another 10 minutes
