Knead it into a dough that is not too hard and not too soft, wrap it in plastic wrap and let it rest for about half an hour (actually I forgot about the dough, so I left it there for almost an hour😂)

Washing noodles, as the name suggests, means putting the dough in water and kneading it like washing clothes. The water slowly turns white. Repeat two or three times until the water no longer turns white.

Pour the white water into the prepared container, seal it with plastic wrap and put it in the refrigerator. Then don't worry about it. The remaining clump is gluten, so put it in the refrigerator too.

I didn't have a special container, so I just took a basin, brushed it with oil, and poured a spoonful of batter into it. After the water boils, put it in and steam it.

Cut into the width you like, grate the cucumber, steam the gluten and cut into pieces. Also prepare a bowl, add two spoons of peanut butter (the freshly ground peanut butter I bought has already been mixed with sesame oil, so there is no need to add sesame oil), a spoonful of soy sauce, a little salt, chicken essence, vinegar, and let it cool down. If you like spicy food, you can add some spicy oil to make it more delicious. Stir evenly and add to the cold skin.
