Chestnut Braised Pork
Overview
It's the season to eat chestnuts again. I bought some when I went to the market to buy vegetables today. They are very fresh, big and golden, and I am drooling just looking at them. Braised with pork or pork ribs, it’s especially sweet and delicious, and kids love it!

Peel, peel and wash the chestnuts and set aside.

Cut the front leg meat into small pieces, mix in a little salt, chicken essence, soy sauce and corn starch and set aside.

Wash the dried tea tree mushrooms, remove the heads, cut into small sections, and soak in water for about 20 minutes.

Brush the pan with oil, heat it over high heat, add the front leg meat and fry over medium heat until slightly browned.

Add the chestnuts and tea tree mushrooms, and the water used to soak the tea tree mushrooms.

Add chicken essence and salt.

Add rock sugar and a little soy sauce.

Add another half bowl of water, cover and simmer over medium heat until the juice is reduced.

Open the lid and serve on a plate and enjoy.
