I went back to my hometown to buy old ginger grown by a farmer. It’s very spicy! Wash the ginger soil. Leave the skin on. Squeeze into ginger paste.

Wash the red dates and remove the cores. You can soak them for half an hour. Red date water is reserved. Squeeze part of the red dates into puree, leaving a small amount of red dates cut into cubes for later use.

Using cubed brown sugar will make it sweeter.

Pour all the prepared ginger + brown sugar + red dates into the stew pot. There is too much material. So I added some red date water. Stir constantly until thick. Just collect the juice.

After simmering for 1 hour to reduce the juice, add the wolfberry and red date pieces. (This will give you a better taste when you drink it with water)

Let cool after the juice is collected. It’s ready to be bottled~
