Overview

Yangchun noodles, also known as smooth noodles or clear soup noodles, are Shanghai's specialty snacks. According to folk custom, the tenth month of the lunar calendar is called Xiaoyangchun. According to legend, because the price of this kind of noodles is ten cents a bowl, it is known as Yangchun noodles. Yangchun noodles do not add any ingredients, only soup. Therefore, there is generally no restriction on the use of noodles. Longxu noodles or wide noodles can be used. It is best to use fresh noodles. The soup tastes better with clear broth, or boiled water can be used. Usually Yangchun noodles only have some chopped green onions.
