Dried tofu skin, set aside.

Soak the dried tofu skin in warm water. After soaking, squeeze it dry and cut into shreds.

Wash the red potatoes and set aside.

Peel, shred, wash, drain, and put in a basin.

Chopped garlic, set aside.

Chopped green onions and coriander, set aside.

Heat the pot, add an appropriate amount of oil, add the garlic and stir-fry until fragrant, then add the shredded potatoes and bean skins, add an appropriate amount of oil to taste, and stir-fry a few times.
