Zongzi (Jujube)
Overview
Zongzi (zòngzi), also known as horn millet and tube rice dumpling, is a traditional festival food of the Han people during the Dragon Boat Festival. It is steamed by wrapping glutinous rice in rice dumpling leaves. The legend was spread in memory of Qu Yuan. It is the traditional food with the deepest cultural accumulation in Chinese history and is deeply loved by people.

Soak the glutinous rice one day in advance to allow the glutinous rice to absorb the water, which can reduce the final cooking time. I use round glutinous rice here. You can choose the glutinous rice you like. Any kind of glutinous rice is fine. It’s whatever you like here. Don’t worry too much about the type of glutinous rice!

Soak the dried rice dumpling leaves in water for a day in advance until soft, so they are easy to pack!

The dates are also washed in advance and soaked for a while, but you don’t need to soak the dates for too long, just 3-4 hours!

Before using the rice dumpling leaves, put some salt in the pot and simmer for 5 minutes. Take them out to cool and then clean them. Cut off the big hard stems at both ends of the rice dumpling leaves. Then check the size of the rice dumpling leaves and take a piece of rice dumpling leaf. If the rice dumpling leaves are small, you can stack two pieces and roll them into a cone shape from the middle!

Then fill the jujubes with some glutinous rice, cover the jujubes, and press them. Pay attention to filling the rice as fully as possible!

Put two more dates on the filled glutinous rice, one on each side, then fill the placed dates with glutinous rice and compact it. I put three dates in one rice dumpling. You can decide according to your own situation!

Dear friends, please use a spoon to compact the glutinous rice before wrapping. After compaction, pull down the two upper leaves to wrap the cone at the bottom. Shape the excess leaves little by little according to the outline of the glutinous rice filled rice dumplings and wrap them up. After wrapping, tie them tightly with lemongrass rope and it is done. Put the wrapped rice dumplings into a pot with cold water and cook for about 2 hours (depending on how much the glutinous rice is soaked!) until the glutinous rice is soft and glutinous, then take it out of the pot. The hot weather is about preservation. You can let it cool and store it in the freezer of the refrigerator indefinitely. When you eat it, take it out of the pot and steam it before you eat it.
