Fried rice noodles
Overview
Simple vegetarian fried millet noodles. I didn’t really want to eat rice today, so I prepared a vegetarian fried rice noodles. There were cuttlefish balls in the refrigerator, so I made a simple bowl of soup.

First prepare two eggs, put them in a bowl, add some salt and mix well.

One carrot, grated into strips with a tool or cut into thin strips with a knife

A handful of green vegetables, I used Shanghai greens, but you can also use other green vegetables.

Heat hot water in a small pot and put the dry rice noodles in a bowl. After the water boils, pour it into the bowl and blanch it in about 5 minutes. Then take out the blanched rice noodles and soak them in cold water so that the rice noodles will not stick together.

Heat oil in a pot, fry the eggs first, take them out of the pot, then add the carrots and fry until cooked, add the green vegetables and stir-fry together, add a little salt, half a spoon of light soy sauce, a small amount of oyster sauce, add the previously fried eggs, so that the side dishes are all flavorful, finally add the cooked rice noodles, stir it with chopsticks, and it is basically done.
