Remove the flesh from the melon and wash it

Cut into slices (the melon slices should not be too thin) and set aside

Crack three eggs into a bowl and beat them

Put an appropriate amount of oil in the pot, when the oil temperature reaches level 7, add in the egg liquid and fry until scattered

Then add melon slices

Stir-fry repeatedly

Add appropriate amount of salt

Cover the pot and simmer for one minute
