Fried watermelon rind
Overview
Stir-fried watermelon rind preserves the original flavor of watermelon rind. Those who like it like it very much, and those who don't like it probably hate it. I like it very much, and I have been eating it since I was a snack. I prefer to use steamed buns dipped in red cabbage soup and share it with everyone.

Remove the rind from the watermelon, wash it and cut it into slices

Put oil in the bottom of the pot, when the oil is hot, sauté the chopped green onions until fragrant,

When you smell the aroma of chopped green onion, add the melon rind and stir-fry

Add salt, the appropriate amount depends on your personal taste. If you don’t know how much to add, you can add less, and dip it with chopsticks or a spoon to taste.

Stir fry and add (flat spoon) a spoon or a deeper spoon about half a spoon of soy sauce or light soy sauce
