Stewed Sydney Pear with Rock Sugar
Overview
The climate in autumn is relatively dry, and I often feel that my throat is dry and phlegm-prone. In addition to drinking water to replenish moisture in time, you also need to eat more fruits to replenish moisture. When it comes to autumn seasonal fruits, the first choice should be Sydney pears, which have the effects of moistening the throat, promoting fluid production, moistening the lungs and relieving coughs. There are generally two ways to stew pears with rock sugar: one is to cut the pears into pieces and boil the pear water in a pot, and the other is to remove the core of the whole pears, add rock sugar, and then steam and stew them in water. Today we will use the second method, using whole pears to make stewed pears with rock sugar. The method is very simple. First wash the pears, peel and core them, add rock sugar and drinking water, and simmer slowly over low heat. When the rock sugar melts and penetrates into it, the snow pear changes from crisp to soft to crystal clear. The rock sugar stewed snow pear is ready to moisten the lungs, clear away heat, promote body fluids and relieve cough.

Prepare all the ingredients needed to make [Snow Pear Stewed with Rock Sugar]: 2 Sydney pears and 9 pieces of rock sugar. First clean the pears and then peel off the skin with a paring knife.

Place the peeled pears on the chopping board and cut about 1/3 of the top with a knife to make a lid for the pear cup. Then use a knife to rotate around the cut surface of the other 2/3 of the pear to remove the core. When digging, be careful not to dig through the bottom of the pear.

Put the processed pears into a bowl. Put the rock sugar into the pear cup and add 30ml of drinking water. You don’t need to add it because the pears will leak out some water during the steaming process.

Finally, cover the upper 1/3 of the pear that was cut previously and insert 2-3 toothpicks to secure it.

Add enough water to the steamer and bring to a boil over high heat. After steaming, place the pear cup on the steamer. Steam over high heat for 10 minutes, then turn to low heat and simmer for 1 hour. Turn off the heat and simmer for 5 minutes. The rock sugar stewed snow pear is ready.
