Snowflake Hand-Teared Bread with Flowers and Full Moon
Overview
During the Mid-Autumn Festival, the flowers are blooming and the moon is full, and the family is reunited and has fun. At this time, a piece of moon cake, a piece of bread, and a cup of good tea are enough for this life. Since it is the Mid-Autumn Festival, I wanted to make a bread suitable for the festive atmosphere. Today’s snowflake bread has a round appearance, symbolizing reunion. The shape of snowflakes means that the flowers are full and the moon is full. The soft bread and sweet jam are beautiful in shape and taste great.

Ingredients
Steps
-
Have all raw materials ready.
-
Except for the butter, put the other raw materials of the dough into the cooking machine in the order of liquid in the bottom layer, powder in the middle layer, sugar, salt and yeast in the upper layer, and knead until a thick film can be drawn out.
-
Add butter and knead until expanded.
-
It is not necessary to knead out the glove film, just make it into a thin film.
-
Roll the dough into a round shape.
-
Spread a thin layer of softened butter into the egg bowl, put the dough in, and cover with plastic wrap. Leave to ferment in a warm place.
-
Let the dough rise until doubled in size, about 1 hour.
-
Dip your finger in flour and poke a hole. If it doesn't shrink or collapse, it means fermentation is complete.
-
Use a rolling pin to gently roll out the fermented dough to deflate it.
-
Divide the dough evenly into 5 small pieces, roll into balls, cover with plastic wrap and rest for 15 minutes.
-
Roll each of the 5 small pieces of dough into a round piece with a diameter of 17cm.
-
Take out the bottom of the eight-inch removable base cake pan and place a piece of dough on top.
-
Spread jam evenly on the dough sheet, leaving 1cm unspreaded on the edge.
-
Then put the second piece of dough on it, spread it with jam, and then cover it with the third piece. And so on, until the fifth dough piece is stacked on top.
-
Find a bottle cap and print a circle in the middle of the dough piece.
-
Take a sharp knife, smear it with softened butter, and cut the dough into 4 equal parts. Remember not to cut into the circle.
-
Then cut a knife in the middle of each piece and divide it into 8 equal parts.
-
Continue to cut a knife in the middle of each piece to form 16 equal parts.
-
Twist the two adjacent pieces.
-
After twisting all 16 dough pieces, a beautiful snowflake will be formed.
-
Place the base of the cake mold into an 8-inch round mold.
-
Place the dough together with the mold in the oven and ferment at 30°C. At the same time, add a cup of hot water for final fermentation. It will take about 30 minutes to ferment until it doubles in size.
-
Brush the surface of the dough after the second rise with a layer of egg wash.
-
Place in the preheated oven, middle and lower layers, with upper and lower heat at 165°C, and bake for 20 minutes.
-
Unmold the baked dough immediately, place it on a baking sheet to dry until warm, and then pack it into bags.
