Prepare 2 eggs, separate the egg whites and yolks, and put the egg whites into a water-free and oil-free vessel.

Beat the egg whites, add sugar in batches, beat until nine points, lift the egg beater, and the egg whites will have small sharp hooks.

Add 20 grams of honey to the egg yolk. My honey is a bit thick, so I added about 30 grams of milk and beat it well with a whisk.

Add the egg yolk paste to the egg whites and mix carefully and slowly so as not to make circles or wrinkles. Find a small flat plate, I used a pizza pan, brush it with a thin layer of oil for easy release, scoop about 3 tablespoons of batter and smooth it out with a spatula.

Put it in the upper rack of the oven and bake for three or four minutes, just check the color on the surface. Remember to only turn on the heat. Take it out and continue to put the batter, and continue to bake until the batter is completely baked. I only baked three layers.
