Overview

Braised noodles are home-cooked noodles that are popular in Shanxi, Hebei, western Inner Mongolia, Henan, and Shaanxi. The method is relatively simple. The main ingredients are beans and meat, and other ingredients can be added according to your own preferences. In one pot, there are meat and vegetables, vegetables and staple foods, which is very suitable for small families to cook and eat. Bean stewed noodles first originated in the Zhecheng area of Henan. In the early years of famine, people had to carry food on their backs. Neighbors would borrow food from each other or even grab food. So the Henan people quickly boiled the water, put the noodles in, and buried the pot underground at home. They used the temperature of the water and the slow heat transfer characteristics of the soil to simmer the noodles until they were almost cooked. The old people looked at people at the door of the courtyard, and the young people in the family quickly squatted next to the pot underground to finish the noodles.

  1. First break the beans into 1cm pieces

  4. Heat the oil, sauté the onions, peppers, ginger and garlic, add the beans and stir-fry, then pour in the tomatoes and various seasonings such as vinegar, dark soy sauce, salt and chicken essence. Finally, pour in water. The water should be foamy enough to soak the beans

  5. Boil the water first, then scoop out a bowl of soup. This is my trick. The remaining water just covers the beans. Put one layer first. After about 10 minutes, you will see that the surface has changed color. Put the second layer and see if there is still soup below. If there is less, pour the soup you just scooped out directly onto the second layer.

  6. After simmering for a while, check whether the soup has dried up. If it has dried up, pour back some of the soup you just scooped out. If it is not dry and continues to simmer, the soup will be dry and the noodles will be cooked.

  7. Pour in the remaining soup, or not, depending on whether you prefer dry or less wet noodles. Finally, stir the beans and noodles, and the delicious braised beans and noodles are ready. Start eating.
