Bacon Cheese Baked Potato Mashed
Overview
My husband and I both would die if we didn’t eat potatoes. Both of them love potatoes very much. I deeply love mashed potatoes, so this cheese baked mashed potatoes has become a frequent guest on my family dining table. The soft and dense texture of mashed potatoes, coupled with the aroma of milk and butter, combined with the fresh aroma of bacon and the refreshing taste of mixed vegetables, and finally accompanied by the long string of mozzarella in your mouth - oh, it's perfect!

Let’s cook the vegetables first. Dice a small piece of carrot, put it in a pot with green beans and corn kernels and simmer over low heat until soft. (It’s even easier to have ready-made vegetable bags mixed with the three ingredients)

Peel and cut two potatoes into small pieces, steam them in a pot over water until chopsticks can be inserted easily. Cut two strips of bacon into small pieces.

Place the steamed potato cubes in a baking bowl and mash them with a potato press or spoon.

Remove the cooked miscellaneous vegetables, filter out the water, and place it in the mashed potatoes. Add half of the sliced bacon, 10g butter, 50g milk, two spoons of salt, and appropriate amount of black pepper, and mix well.

Use a spoon to smooth the surface of the mashed potatoes. At this time preheat the oven to 200 degrees.

Shred the mozzarella and spread evenly over the mashed potatoes.

Sprinkle remaining bacon on top. Sprinkle another layer of mozzarella cheese.
