Overview

Quick-rise bread is a small bread made without yeast fermentation, but using baking powder or baking soda instead of yeast as a chemical leavening agent. Its outer skin is browned and crispy, and its inner fluffy and soft flavor is similar to scones or pancakes.

  1. Put the flour, baking powder, sugar and refined salt into a container and stir with a whisk to combine.

  2. Pour in the yogurt and mix with a rubber spatula until the moisture is evenly distributed.

  3. Line a baking sheet with baking paper and place the dough in the center.

  4. Shape into a round dough with a diameter of 12 cm and a height of about 4 cm, and sift the low-gluten flour through a sieve.

  5. Make cross-shaped cuts with a knife.

  6. Bake in a preheated oven at 200 degrees for about 15 minutes on the middle rack with upper and lower heat until browned and covered with aluminum foil. Bake for another 15 minutes before taking it out of the oven.
