Red Bean Cheese Bread
Overview
Ever since I went to Taiwan, I have fallen in love with the bread made by Taiwanese bakers. The most important feature of his bread is its original flavor. It is as simple as just flour, water, salt and yeast. After full fermentation, the baked bread has a unique flavor. This bread is a variation of the French baguette. Its crust is made from French baguettes, so it has a chewy texture. For such a simple and healthy bread, the key to a unique flavor lies in cultivating natural yeast. With it, this bread is unique. Coupled with the filling of homemade honey red beans and cheese, it is really a pleasure to bite into it!

Take out the home-grown yeast from the refrigerator and weigh out 25 grams for later use. How to cultivate fruit yeast is written in my recipe for carrot and bagel bread;

Prepare other ingredients and make old noodles: When making bread, set aside a piece of dough and put it in the refrigerator to slowly ferment at low temperature for more than 16 hours. Do not put it in the refrigerator for the time being. Take it out and warm it when needed;

Tear the old noodles into pieces, pour the home-grown yeast and water into a basin, stir evenly, add yeast powder and let it sit for a while;

Add high-gluten flour and stir until it becomes fluffy;

Knead for about 20 minutes until the dough is smooth and a thin film appears. Cover with a damp cloth and ferment at room temperature for 1 hour and 20 minutes;

Prepare honey red beans one day in advance and prepare 20 grams of cream cheese;

Put it in a large bowl and stir evenly, the filling is ready;

The dough has fermented until it has doubled in size. If your finger is dipped in flour and inserted into the dough and it does not collapse or shrink back, it means the fermentation is complete;

The total weight of the dough is about 520 grams. After the dough is degassed, divide it into 10 equal parts, cover it with a damp cloth and let it rest for 30 minutes;

Flatten it with your hands, add fillings, close the dough and face it down like a bun;

Place the dough on a baking sheet lined with silicone paper, and place the dough two by two close together to form a peanut shape;

Cover with a damp cloth and ferment at room temperature for about 30 minutes;

Sprinkle with powder and print out your favorite pattern;

Preheat the oven to 180 degrees, put the dough in, spray with water, and bake on the middle shelf for 20 minutes.
