Waxy corn bowl cake
Overview
I didn't originally want to use waxy corn, but I just happened to have three waxy corn cobs. They were a bit old. How should I eat them if I didn't get rid of them? Just give it a try. Add a little baking soda. Corn contains niacin, but most of it is in the conjugated form and is not easily absorbed by the body. Adding a little alkali can turn it into a free form, making it easier to absorb. That’s not the purpose of adding baking soda, though. In fact, I added baking soda just to test whether the glutinous corn syrup would turn into a soft cake. The final result showed that the rise was very successful, but the waxy corn was too sticky and finally collapsed, with no trace of rise
