I used the very small Beibei pumpkin for this fried rice. Of course, if you don’t have it, any other pumpkin will work. Peel and dice the pumpkin. I forgot to take a photo. Sorry.

Dice the cucumber and set aside

Cut the sausage into cubes and set aside

Preheat the pan, add an appropriate amount of oil and fry the eggs until cooked.

Then pour in the cucumber cubes, add a little salt, and stir-fry lightly. Cut off the raw parts first, then remove from the plate and set aside.

Pour oil into the pan again and fry the pumpkin until cooked.

When the pumpkin is eight ripe, add the diced sausages and continue to stir-fry.

After frying for a while, add rice and soy sauce and stir-fry until loose. (Rice can be leftovers or freshly cooked)

Then add the eggs, cucumber and salt and stir-fry.

Add chopped green onions and fried peanuts and turn off the heat. (Here I buy ready-made peanuts).
