Almond Wafers
Overview
It looks very similar to the tile puff pastry made before, but the method is actually different. The method used this time is to beat the egg whites and then mix in the butter, while the tile puff pastry made before was to beat the butter, then add the egg white and continue to beat. Melt the butter into liquid form and set aside

Add fine sugar to the egg whites in batches and beat until dry peaks form

Sift in low-gluten flour

Mix well

Add melted butter

Continue to mix evenly

Place the tile pastry mold in the baking pan, scoop out some of the protein batter and put it on
