Apple Pie
Overview
This apple pie is the first one I have made since learning to bake. The pie crust is based on Junzhi’s recipe, and the apple filling is based on Love and Freedom’s recipe. This recipe is also the first recipe I’ve ever posted. Taking process pictures is a tedious process, and my baking is always interrupted by Niu Niu's various situations. With Niu Niu over 2 years old, baking seems particularly strenuous, but it can't stop me from loving baking. Baking makes me smell the taste of love, makes me satisfied from the children's eating with relish, and reminds me of the days when I worked in the laboratory...

All ingredients for pie crust.

After the butter is softened, add low-gluten flour and fine sugar, and knead evenly with your hands until it resembles coarse cornmeal.

Add water, knead it into a slightly smooth dough, and place it in the refrigerator to rest for more than 15 minutes, preferably 1 to 4 hours.

Peel, core and cut the apples into small pieces.

Put the apples into the pot, add sugar and lemon juice, cook until the water is gone and then turn off the heat.

Add cinnamon powder and mix well.

Prepared apple filling.

Divide the relaxed pie dough into 2 parts, the weight ratio of the 2 parts is 2:1. Roll out the large pie crust into thin slices.

Spread the rolled out pie crust on the pie plate and press the pie crust lightly with your hands to make the pie crust stick to the pie plate.

Use a rolling pin to roll over the pie plate and cut off any excess pie crust.

Remove excess pie crust and use a fork to make holes evenly on the bottom of the pie crust.

Roll out the small piece of pie crust separated in step 9 into thin slices and cut into thin strips with a knife.

Fill pie dish with apple filling.

Use the kilometer long strips cut out in step 13 to weave a criss-cross grid on the surface of the pie plate.

Use your fingers to press the junction between the grid and the pie plate, remove excess pie crust, and bond the grid to the pie crust below.

Brush the surface of the grid with egg wash, put it in the preheated oven, bake at 200 degrees for 15 minutes, then lower the temperature to 175 degrees and bake for 20 to 25 minutes.
