Fried glutinous rice patties
Overview
The inspiration for this dish comes from the Tujia meatloaf made in Xunxiangji. The meatloaf has so much meat that it feels a bit greasy after eating it, so I want to add calla lily to remove the greasy feeling. When making the meatloaf, I use a biscuit grinder. During the making process, the grinder and your hands should be moistened with water, so that it does not stick to your hands and is easy to release from the mold. Soak the glutinous rice for a few hours in advance, cook and let cool for later use

Soak the glutinous rice for 3 hours in advance

Cook the glutinous rice, let cool and set aside

Peel calla lily and cut into cubes
