Yellow duck is called stewed tofu
Overview
Yellow duck call, also known as yellow catfish and yellow bone fish, is a special dish in Hunan. You can see it in food stalls in the streets and alleys. As a Hunanese living in Beijing, I missed the taste of my hometown, so I learned to make it myself. This soup usually requires adding perilla to make it pure. However, I didn’t see anyone selling perilla in Beijing, so I had to skip this step, but the soup still tastes good!

Wash the yellow duck, drain it, cut the tofu into cubes, cut the green onion into sections, and slice the ginger and set aside.

Put an appropriate amount of vegetable oil in the wok, heat it up to 70%, put the yellow duck into the wok, and fry for a minute or two on both sides.

Add water to the pot to cover the duck, and add onion and ginger.

Add the tofu, add an appropriate amount of salt, turn up the heat, and after the water boils, reduce the heat to medium-low and cover and simmer for 30 minutes to make the tofu form a honeycomb shape.

Finally, sprinkle with chopped green onion, chicken essence, and pepper, and serve.
