Homemade candied winter melon
Overview
Someone gave me a big winter melon and I couldn’t finish it for a while, so I made it into diced candied melons! Leave some for the kid to eat, take some to give away! I remember that my grandpa loved eating candied melon dices the most when he was still alive. It was also one of my childhood snacks! As I eat it in my mouth, my mind is filled with memories~~~~

First, mix quicklime and water evenly (be careful that the bubbles produced when the lime enters the water will splash onto the skin). Stir evenly and let it sit for ten minutes. Take the clear water above and pour away the rest

Peel, core and cut the large winter melon into strips. Don’t be too particular about the exact size

Soak the cut winter melon strips in clear lime water for ten hours (it’s best to store them in the refrigerator now that the weather is hot). This step mainly serves to harden the melon strips. If you have tried it without lime water, please advise 😊

After ten hours, pour away the lime water, rinse it with clean water and soak it in clean water for eight hours. Change the water every two hours (this step is to remove the lime smell from the melon strips)

After soaking for eight hours, turn on the heat and cook. After the water boils, continue to cook for five minutes

Immediately after cooking, pour out the hot water and rinse with cold water, and continue soaking in cold water for ten hours (this step is very critical, as it will determine whether the melon sticks are soft and waxy in the end)

After draining the water, I weighed the melon sticks at 1,220 grams and added sugar according to 80% of the weight of the melon sticks. I calculated it to be 976 grams! Marinate a layer of melon strips with a layer of sugar until the sugar turns into water, about three hours or more

Pour the pickled melon sticks and the melted sugar water into a non-stick pan and fry immediately (because there is a lot of sugar water, you need to be patient). I use medium heat and stir occasionally to prevent it from sticking to the bottom
