Home fried dough sticks
Overview
Youtiao is a kind of pasta, a long and hollow fried food with a crunchy and chewy texture. It is one of the traditional Chinese breakfasts and has been popular for a long time. Home-made fried dough sticks are easy to operate, clean and hygienic, and taste as good as takeout.

Steps
-
Knead the dough stick noodles into a ball, folding the dough from all sides to the middle each time, let it stand for 15 minutes and fold the dough again, repeat 3 times, cover with film and refrigerate for 6 to 8 hours (or mix the dough the night before, take out and return to room temperature the next day), roll into a long strip, no need to knead the dough (I forgot to take a picture of the dough).
-
Cut into equal width strips.
-
Apply water in the middle, overlap the two pieces, and press the line in the middle.
-
Heat the soybean oil in the pot to 60% heat, add the dough sticks and fry them, turning them constantly.
-
When the color is golden, remove the fried dough sticks (I usually use an iron pan for frying fried dough sticks).
-
Then put in a deep-fried dough stick. If the temperature is too high, it will be easy. If the temperature is too low, the deep-fried dough sticks will not rise and will not puff up.
-
The fried dough sticks come out of the pan and have a good puffing effect.
-
Take out 2 more fried dough sticks.
-
Cut the cross-section of the fried dough sticks, and they will be puffy without dead ends, no dough knots, and the effect of layering the dough into layers.
-
The veins are evenly puffed and the layers are clear, and the texture is crispy and delicious. It is the best combination with fried dough sticks for breakfast.
