The large salted egg yolks are crystal clear. Because I bought it late last year, not to mention it was a lot more expensive, and many of the egg yolks had white centers. It was really frustrating to spend so much money. If I bought it so early, a new problem arises: how to save it? Just leave it there after you buy it. Not only does it take up space, but you are also worried that there will be rotten eggs, and you are also worried that there will be problems during transportation and you will not be able to communicate with the store in time. Today I will share with you a preservation method that I tested myself. The effect is very good and it has been preserved for more than half a year.

The red mud salted raw salted duck I bought had a lot of mud on the surface.

Gently wash away the mud on the surface of the salted duck eggs.

Crack open the salted duck eggs and take out the yolk. You will find that there is a film on the surface of the egg yolk. Rinse it with tap water. Be sure to carefully check the film on the surface. It must be washed off, otherwise it will be very fishy!

Then put the washed salted duck egg yolks on the drying net to dry.

If you are in a hurry, you can also use kitchen paper to absorb the moisture.

Relatively speaking, I still prefer natural air drying. Although the process is a bit slow, the surface is smoother.

After drying, tear the plastic wrap into small pieces, wrap the egg yolk against the plastic wrap, and gather it into a small ball.

If you think it’s time-consuming to wrap each bag individually, you can also roll up the two bags from both ends of the plastic wrap.

Fold the other two ends down, stick them tightly, and wrap the egg yolk tightly without leaving any gaps.

After everything is wrapped, seal it in a tight bag and put it in the refrigerator.

When needed, remove the plastic wrap and soak in vegetable oil for 1-2 hours, or directly soak overnight.

Then drain the oil, spray with rum and bake in the oven to make snacks.
